We prepare to order, you take away or we deliver.

Nothing sits waiting in a display case here. When the order comes in, the fish is cut, the maki rolled, the nems folded and the hot dishes seared in the wok for you. The vinegared rice is cooked during the day, never prepared the night before, and the fish is delivered fresh every morning to the counter at 2 avenue d'Évian.

Two ways to collect that work: pickup at the counter, free and with no middleman, or Uber Eats delivery. Either way, the insulated packaging is designed for raw fish, so the nigiri you order keeps its shape until the first bite. The dining room stays open lunch and dinner, 11.30am to 2pm then 6pm to 10.30pm, every day except Wednesday.

Collection at the counter, the fastest option.

Sushi is a last-minute dish: the less it waits, the better it is. For takeaway there is only you between the counter and the plate, no courier trip. You call the restaurant, place the order, and collect it fifteen to twenty minutes later, once the pieces are cut and folded.

We are below the Belvédère, a five-minute walk from the SNCF station, and parking is easy in the side streets and on the public car parks of the Belvédère and the Hôtel de Ville. By the time you cut the engine, the order is ready. The whole menu travels: sushi, maki, californias, crunch rolls, but also bò bún, phở, pad thai and the hand-folded starters.

Raw dishes are best eaten within twenty to thirty minutes of pickup or delivery: the fish stays tender, the rice keeps its grain. Nems and gyoza keep their crunch over a short trip. Hot dishes like phở travel with the broth apart, to be combined just before eating so the noodles keep their bite. A simple tip: if you have to wait, keep the tray chilled and take it out ten minutes before sitting down.

匠The counter

A sushi chef behind every order, even delivered.

What goes into the tray comes from the hands of Vincent, a sushi chef for twenty years. He cuts, presses and rolls each piece in person, with no line and no machine. The fish is delivered fresh every morning, the sauces are reduced in the kitchen, the rice is cooked twice a day. That craft, not a self-service shelf, is what you find at home.

The delivered menu is exactly the same as in the restaurant, including the large sharing formats, platters and boats. Two things to know before ordering: the meats served are halal, chicken or beef, and there is no pork on the menu. The meat-free and fish-free cooking is not a makeshift variant: vegetarian gyoza, tofu pad thai, avocado or cucumber maki, wakame salad and edamame.

Opened in November 2025 at 2 avenue d'Évian, Sushi & Nem brings together the Vietnamese and Thai cooking of a restaurateur family and a sushi counter under one roof.
