The restaurant is at 2 avenue d'Évian, at the foot of the Belvédère district, on the road that runs down from the town centre towards the lake. From Thonon-les-Bains railway station, it is about a five-minute walk. From the town centre or the port of Rives, avenue d'Évian is a direct run, on foot or by car.
For parking, the simplest options are the surrounding streets and the public car parks of the Belvédère and the Hôtel de Ville, a few steps from the dining room. Service runs at lunch and dinner, from 11.30am to 2pm and from 6pm to 10.30pm, every day except Wednesday. A town-centre address serves three very different crowds in the same day. In Thonon-les-Bains, our service is built around those three rhythms: the lunch break, the evening meal in the dining room, and the order collected at the counter on the way home.

At midday, the set menus are served on the 11.30am to 2pm service only: the dish of the day with its two halal chicken nems and a drink, the student menu, and the menu for under-tens with its nems, rice and coconut pearls. It is the answer for people working in the centre, for students and for families with only an hour to spare.
In the evening the rhythm changes: the room fills with groups, couples and families, and the counter works to order, piece by piece. For large tables, the sharing platters and the Sushi Party boats remove the need to choose, and can be collected as takeaway too. Everything is set out, category by category, on the full menu, allergens and vegetarian options included.

What sets the house apart in Thonon-les-Bains is that double menu. On one side the counter: nigiri, maki, california rolls, crunch rolls, spring rolls, dragon rolls, temaki, sashimi and chirashi, with vinegared rice cooked during the day and fish delivered fresh. On the other, the family kitchen: bo bun, pho, beef Loc Lac, lemongrass chicken, and pad thai with chicken, beef, prawn or tofu.
Two useful markers before ordering: the meats served are halal, chicken or beef, and there is no pork on the menu. Cooking without meat or fish is not an afterthought either, with vegetarian gyoza, tofu fried noodles, avocado or cucumber maki, wakame salad, edamame and the Veggies platter.

Vincent runs the counter after twenty years behind a board. It shows on the plate: a nigiri with taut, uncrushed flesh, a maki that holds without being over-tightened, a california roll where every ingredient stays recognisable. The fish is delivered fresh, the Koshihikari rice is cooked twice a day, the sauces are reduced in the kitchen.
That is what separates a counter from a chilled shelf: nothing is assembled in advance, everything is cut when the order comes in. And because the kitchen runs in parallel, one table can order sashimi on one side and a pho or fried noodles on the other, without anyone waiting.
